At the shop, hundreds cups Chai are sold per day
Assam tea is necessity, because it can be cheaply mass supply
He saw that a woman buy 20kg of tea leaves
I felt the taste of tea came front as boiled with milk
While I felt flat as brewed straight at the end of year tea party

Pan fried tea by Shibamoto

 Kabosu marmalade with pan fried tea
Kabosu is citrus fruit
Marmalade was so sour that it matched well with tea

Shibamoto work in welfare facility, because farming is hard regarding money
But, I think that it is good a tea master has the other work

Dried sweet potato

 The other day, I joined to make dried sweet potatoes
At Akiyama tea estate, Fuji, Shizuoka
The first, sweet potatoes were steamed for 4hours

Steamed potatoes !!

 Potatoes were peeled
It was hard to peel because potatoes were very bumpy
Grandma said that it like Gaudi's architecture

 Granpa said I am brain surgeon

 And these potatoes were dried under the sun by granddaughters

Now, napa cabbages and radishes were dried

Pu'er tea

  Sorry, I brewed pu'er tea with Andrzej's shiboridashi as a gaiwan
The soil of the tea wear was rough
Then, I felt that it may match well high temperature
than low temperature like sencha tea
Pu'er tea became milld even though I felt bitter with a gaiwan

This post fermented pu'er tea were all made by hand
Also Rolling !!
 Making post fermented tea leaves needs a large mount of tea leaves
in order to fermentation
Because I gave up a little bit of tea leaves at Shibamoto,
 I can not image hand rolling 120kg/day fresh leaves

It was advantage of hand rolling that tea leaves had elasticity
So, tea leaves were aerobic fermentation

Pu'er tea

I want to know the state of tea leaves
Whether the fermentation of the tea leaves were well or bad
Whether the fixtation were sufficient
And, What are the tea master thinking?
I want to know these questions from tea leaves

I have received the impression from tea leaves
For example, recently, from white tea leaves made by Mr.Shibamoto
But, I can not explane my impression
And my impression does not equal to goodness of tea leaves
I luck mind and times to watch the tea leaves

I want to know how to watch or feel the tea
But, I do not know Xishuangbanna
While, I think that the drainage water from tea leaves is common sencha and pu'er tea,e.g.

But, I can not distinguish whether good or bad tea leaves
I can not understand that tea stuck in the throat
I can not feel that tea scratch in the throat
I sometimes feel good tea leaves, while another times I feel bad the tea leaves
When I made the tea, I can not answer whether the tea is good or bad
Next tea season, I am going to join making tea more and more
Until next season, I want to study how to watch tea leaves
Then I am going to pu'er tea party by Mr.Fujimoto

I feel that this tea leaves were very good
The scent was special
I can only say that the scent can not arise from Japanese tea leaves
But I can not explane the reason
I have little words for tea
